Carrots! Who doesn't love carrots?
All the horses in my barn LOVE carrots! And all the humans in my barn love carrots - well, they LOVE feeding the horses carrots! There is NEVER a carrot shortage in my barn!
So what does a "starving" horse trainer do with this abundance of carrots? Does she take some home? Absolutely! Carrots make for some good human-eats, too!
What do I love to make with all these carrots? Well, let me show you!
Carrot Ginger Soup
This one is so easy, healthy, and full of flavor. It's also VEGAN for the folks that do that lifestyle. This soup is cheap, uses basic pantry staples, and is packed full of all the nutrients us athletes crave. It's a total win.
Ingredients
6 Carrots - I usually use 6 or so... more carrots, more soup!
1 Yellow Onion - I usually only need one yellow onion
1-2 Potatoes - I used 2 small Yukon Gold potatoes and left the skin on. The potato helps add a creamy texture without using dairy. (You could leave out and just add a splash of cream, I suppose)
4 Cups (1 carton) Stock - Use your favorite (veggie stock to keep it vegan)
1 Tbsp Ginger - Fresh or ground, whatever makes you happy! Add more if you love ginger!
1 Tbsp Turmeric - Optional, but turmeric and ginger go SO well together!
Salt and Pepper to taste
2-4 Cups water (to add as liquid cooks off or to thin soup to your liking)
Let's Cook!
Roughly chop your carrots, onion, and potato into even sized pieces so they cook evenly.
Add veggies, stock, and seasonings to your large stock pot or dutch oven.
Bring to a boil and then reduce to simmer. Cook until veggies are tender. Add water as needed.
Remove your pot from the heat. Use your immersion blender and blend, blend, blend! If you don't have an immersion blender, carefully blend in batches using your regular blender.
That's it! So easy, so nutrient-dense, and so tasty!
Most of us riders are ALWAYS on the go! I LOVE finding easy, quick, yet nutritious meals... bonus points if they feel fancy, too! This soup certainly checks ALL the boxes.
